Shortly before closing time, there was still a large amount of freshly cooked food at the counter, but at the same time, there were no customers left to eat it all. This was where the founders, Valentin Belser and Jakob Breuninger, first became aware of the problem of waste in the restaurant industry. Globally, the problem is even greater: approximately one-third of all food is lost along the value chain worldwide.
